Swine, which are reared in great numbers in the plains, yield the famous Westphalian hams; and the rearing of cattle and goats is important.
It has a moderately short head with heavy jowl, a deep, compact carcase, and wide, low and well-developed hind-quarters, with heavy hams. The skin carries an abundance of fine hair.
Its acorn-fed swine are celebrated throughout Spain for their hams and bacon, and large herds of sheep and goats thrive where the pasture is too meagre for cattle.
The production of wool was 300,000,000 lb, as in the grease; tallow, 493,000 cwt.; butter, 500,000 cwt.; cheese, 42,000 cwt.; and bacon and hams, 110,000 cwt.
Game and trout are plentiful; milk, butter, hams, hides and wool are exported, principally to France.
