Stir in 1and half tbsp caster sugar (fine sugar) and simmer gently for 10 minutes or so stirring to prevent sticking.
Dissolve 1/2 oz gelatine in a little water, and add it to 1 pint of single cream, with 2 oz caster sugar.
Fold over, sprinkle with 1 tsp caster sugar and divide in 2. Try this with lemon too.
As long as the mixture doesn't go runny then stir it in, along with 2 dessertspoons of caster sugar.
